Fungi and waste go together in so many ways. For example we grow mushrooms commercially on waste straw and manure, other fungi species such as Oyster mushrooms are grown for human consumption on “waste” wood and we know that mycorrhizal fungi are essential to soil health. Plus we use fungi to help us decompose waste into plant foods in a compost heap. So fungi, humans and waste have a long history. But that history could soon change if the use of fungi, Neurospora intermedia, and waste to produce gourmet foods becomes established in the West. It’s been used in Indonesia for a long time and is set to change Western cuisine forever according to Vayu Hill-Maini at the University of California, Berkeley.

The Orange Mould That Could Change Waste

Neurospora intermedia, an orange mould that thrives on a variety of waste products, is set to revolutionise the culinary world. And maybe it’s something we can grow in kitchens and/or gardens. This versatile fungus has been used for centuries in traditional Indonesian cuisine, but recent research has uncovered its potential for transforming discarded food into gourmet delicacies.

A Michelin-Starred Innovation

Vayu Hill-Maini and his colleagues at the University of California, Berkeley, collaborated with renowned chefs to explore the culinary possibilities of N. intermedia. By cultivating the fungus on discarded food items, they created a range of innovative dishes that have graced the menus of Michelin-starred restaurants.

From Waste to Gourmet Food Using Neurospora intermedia

One of the most remarkable creations is a cheesy-tasting toast made from stale bread. By inoculating the bread with N.intermedia, the fungus transforms its texture and flavour, creating a unique and delicious snack. Another standout is a sweet dessert made from sugarless rice custard, infused with the distinctive taste of the fungus.
